If you're looking for a delicious way to ramp up your fish game, you seriously need to take this pesto for a test drive.

 

Urban Organics is an indoor farm located in St. Paul, MN. They grow over nine different types of salad blends and mixes along with beautiful, fresh Arctic Char and Rainbow Trout. It's an amazing aquaponics opperation and it's one of the most responsible and sustainable farming methods out there today. 

 

They currently make nine different salad mixes which are available at most grocery stores and co-ops throughout the Twin Cities and while this pesto could work with most of their mixes, we highly recommend the Twin Kales for this, which is a blend of organic green and red kale.

 

While this recipe contains no nuts, it's rich and robust nature comes from the mix of kales. You can also adjust the consistency of the pesto by adding more or less olive oil. If you like it really thick, use less. If you like it a bit thinner, go ahead and use more.

 

This pesto recipe is perfect for their Arctic Char (check stores for availability), but it also would go well with a variety of other fresh fish or chicken.

 

Urban Organics Twin Kales Pesto

Makes About 2 - 3 Cups

 

INGREDIENTS:

  • 4 cups Urban Organics Twin Kales Organic Green and Red Kale Mix
  • 1 1/2 cups (approx. 5oz) Greated Parmesean Cheese
  • Approximately 1 - 1 1/2 cups Extra Virgin Olive Oil (Preferably O-Med Piqual oil, but any will do)
  • 6 Cloves Garlic
  • Juice of 1 lemon
  • 1 tablespoon of Rice Wine Vinegar
  • Salt

DIRECTIONS:

  1. Place Twin Kales mix, parmesean, garlic, rice wine vinegar, and lemon juice into a blender and pulse 3-5 times or until roughly chopped.
  2. Set the blender to a slow to medium speed and slowly drizzle in the olive oil until you reach your desired consistancy.
  3. Season with salt to taste.
