Everybody loves a good burger, but when you swap out your ground beef for delicious Ahi Tuna, you take the whole concept to a brand new level!
This burger is jam packed with big, bright flavors that really work to highlight the tuna and it's easy enough to make for a quick weeknight dinner or classy enough for nice weekend cookout!
Serves 4
1 lb Ahi tuna pulsed in a food processor or chopped fine to resemble burger meat
2 green onions
1 egg
1 cup mayonnaise
1 clove garlic, minced
1 juice of one lime
1 tsp cumin
1 small red onion, sliced thin
1 cup red wine vinegar
¼ cup sugar
1 7.8oz jar piquillo peppers, julienned
¼ cup cilantro, chopped plus more for garnish
Combine ground tuna, egg, 1 diced green onion and salt and pepper to taste. Form into 4 patties. Grill about 5 minutes per side.
For the aioli combine mayo, lime juice, garlic, cumin, chopped cilantro, diced green onion and a pinch of salt.
For the pickled onions combine vinegar, sugar and 1 cup of water in a small saucepan and simmer red onions for about 10 minutes. Let chill in the refrigerator for about 20 minutes.
Spread a generous amount of aioli on the bottom bun. Place burger on top of the bottom bun and garnish it with desired amount of piquillo peppers, pickled onion and cilantro. Try adding your favorite hot sauce!
