Using some nice Indian inspired flavors can really ramp up a dish quick! This roast cod has some amazing sweet and sour flavors from the tamarind chutney and a pinch of Garam Masala also rounds it out with all of its delicious warming spices.
Serves 4
Lightly oil a foil lined baking sheet and add the cod fillets. Drizzle the fillets with the tamarind chutney and using a pastry brush, brush to coat. Generously season with garam masala and salt. Place fish in a pre-heated oven set to Broil. Cook for 7-9 minutes or until fish is flakey and cooked through
Add cooked rice to a mixing bowl. Add cilantro and lime juice and season with a genrous pinch of garam masala and salt. Toss to combine.
Serve fish with finished rice and garnish with additional cilantro and lime wedges
