Shrimp with Black Bean Sauce & Scallions
Here’s a great quick dish that comes packed with big flavor. If you’re a shrimp lover, this Shrimp with Black Bean Sauce is a must try! The other nice thing about this dish is its versatility. You can really use whatever type or style of shrimp you like. If you want to use shell-on, that's fine. If you want to use pre-cooked, that works too. Cooking times will adjust slightly depending on what you use, but by and large, feel free to go nuts!
Shrimp with Black Bean Sauce & Scallions
Serves 2-4
INGREDIENTS:
- 1lb Shrimp
- 1 Bunch Scallions, whites roughly minced, greens cut into 1” pieces
- 2 Cloves Garlic, Roughly Chopped
- 2 Tbsp Ginger, Roughly Chopped
- ½ Cup Black Bean Sauce
- 1 Tbsp Garlic Chili Sauce
- 1 Cup Water
- Limes (for garnish)
- 4 Tbsp Vegetable Oil
DIRECTIONS:
- Preheat a large wok or skillet over high heat. Reduce heat to medium and add vegetable oil, the chopped white parts of the scallions, garlic, and ginger. Stir fry for approximately one minute or until aromatic
- Add the black bean sauce and garlic chili sauce to the pan and stir fry for another minute
- Add water and bring to a simmer
- Once the sauce begins to reduce, add shrimp and toss with the sauce. Cook for about 1-2 minutes depending on the size of the shrimp
- Add the scallions and toss to combine. Cook for an additional 1-2 minutes or until the scallions just begin to wilt and the sauce is reduced to desired consistency
- Serve with rice and lime wedges
