This classic Scandinavian open faced sandwich couldn't be more perfect when it comes to light and refreshing lunches or light dinners. It's packed with flavor and comes together quickly since you're making use of pre-cooked, shelled, and deveined shrimp!
Shrimp Smørbrød
Serves 4
INGREDIENTS:
- 1lb 16/20 Cooked, Peeled, & Deveined Shrimp, tails off, sliced or roughly chopped
- Salmon or Trout Roe
- 2 Tablespoons Fresh Dill, roughly chopped
- 1 Large Shallot, thinly sliced
- Shredded Lettuce
- 1/4 Cup Mayo
- 2 Tablespoons Creme Fraische or Sour Cream
- 2 Tablespoons White Wine or Cider Vinegar
- Pumpernickle or Rye Bread
DIRECTIONS:
- Add mayo, creme fraische or sour cream, white wine vinegar, and dill to a mixing bowl and whisk to combine
- Add chopped or sliced shrimp and fold together. Season with salt to taste
- Top Pumpernickle or Rye bread with shredded lettuce and then the shrimp salad
- Sprinkle the thinly sliced shallot across each sandwich
- Top each sandwich with a spoonful of salmon or trout roe and garnish with additional fresh dill
