Scallop Crudo with Finger Limes & Masago
Scallops are easily one of the all-time great seafood options and it's in part to their natural sweetness. When served raw you can take advantage of other bright flavors to really boost and highlight all that scallops have to offer.
For this recipe we utilize Finger Limes, which are a really neat ingredient that pack tons of flavor. Finger Limes are packed full of small little pearls which look like caviar, but pack big lime flavor. To use them, basically cut them in half and scrape out the small pearls with a spoon. When seasonally available, Finger Limes can be found in the produce section at Coastal Seafoods.
Scallop Crudo with Finger Limes & Masago
Serves 2-4
INGREDIENTS:
- 1lb Large Sea Scallops
- 4 Finger Limes, cleaned
- 2 Tbsp Orange Masago
- 2 Tbsp Crushed Pine Nuts
- Maldon Sea Salt
- 1-2 Tbsp Good Quality Olive Oil (O-Med)
- Fresh Herbs or Microgreens
DIRECTIONS:
- To clean the Finger Limes, cut them in half and use a spoon to scrape out the pearls inside. Reserve the Finger Limes pearls until needed and discard the rind
- Sliced the scallops horizontally into 1/3’s creating several thin scallop “discs”
- Arrange the scallops onto serving plates or platter
- Lightly season the scallops with the large, flakey Maldon Sea Salt
- Garnish the scallops with the chopped pine nuts, masago, and finger lime pearls
- Finish with a drizzle of good quality olive oil and garnish with fresh herbs or micogreens
