Honey & Maple Roast Salmon
If you're looking for something festive, here's the dish for you! This roast salmon delivers big in the flavor department and given that this could easily be done with a whole side of salmon, it's a great way to feed a lot of people.
This recipe uses approximately 2lbs of salmon which could easily feed at least 4 people, but you could easily scale it up to a full side of salmon without much issue.
Honey & Maple Roast Salmon
Serves 4+
INGREDIENTS:
- 2lb+ Salmon, Skin-On
- 2 Tbsp Dijon Mustard
- 1/2 Cup Maple Syrup
- 1/2 Cup Honey
- Fresh Rosemary
- Salt & Fresh Cracked Pepper
DIRECTIONS:
- In a large mixing bowl, combine mustard, maple syrup, and honey and whisk to combine. Reserve until needed.
- Score the salmon into appropriate portion sizes (will vary depending on how many you're serving). Do this by cutting into the salmon all the way down to the skin, but do not cut through the skin.
- Place the salmon onto a well oiled baking tray. Using a basting bruch, coat the salmon in a thick layer of the glaze.
- Place your rosemary sprigs on a plate and lightly drizzle with olive oil. Toss to coast and then insert the sprigs of rosemary into the scores of the salmon.
- Season the salmon with salt and freshly cracked black pepper and place into a preheated 425 degree over for approximately 10-15 minutes making sure to glaze the salmon and rotate in the over every 5 minutes
- Remove the salmon from the over and increase the oven temperature to broil. Once heated, add the salmon for another 3-5 minutes, roatating as needed to ensure even browning.
- Garnish however you'd like. Ideas include fresh or sauteed greens, fresh herbs, and/or lemon wedges.
