Ginger Marmalade Salmon with Tomato Ponzu Vinaigrette
This is a super simple recipe that is jam packed full of flavor. Perfect for any weeknight dinner, this dish combines sweet, sour, and earthy flavors in a way that highlights the natural flavor and texture of whatever salmon you use.
The tomato ponzu sauce used in this recipe is also very versitile. It can be used in a wide variety of sauces, dressings, or even soups.
Ginger Marmalade Salmon with Tomato Ponzu Vinaigrette
Serves 4
INGREDIENTS:
- 4 6-8oz Salmon Fillets (bonless/skinless)
- 1/2 Cup Ginger Marmalade
- 2 Tablespoons Dijon Mustard
- 1/3 Cup Tomato Ponzu Sauce
- 1 Cup Olive Oil
- Salt & Pepper
DIRECTIONS:
- In a mixing bowl, combine mustard and tomato ponzu sauce and whisk to combine. Slowly drizzle in the olive oil while whisking in order to emulsify vinaigrette. Reserve until needed
- Place salmon fillets on a foil lined and well oiled baking sheets. Top each piece with 2 tablespoons of ginger marmalade and spread with a spoon to fully coat each piece
- Place the baking tray with the salmon into a pre-heated oven set to broil. Cook for approximately 8-10 minutes, rotating the salmon every 3 minutes to ensure even browning.
- Serve the salmon fillets and drizzle with the vinaigrette. Serve with a side of mixed greens or roasted vegetables.
