Before you get all angry that this ISN’T Carbonara, we know. This is a Carbonara INSPIRED pasta dish that we think you’ll love anyway. Like carbonara, it’s a egg yolk based sauce that we’ve livened up with just a touch of Creme Fraische which all pairs incredibly well with all this succulent crab meat! It may not be a proper carbonara, but it’s still absolutely worth giving a shot!
Crabonara
Serves 4
INGREDIENTS:
- 1lb Crab Meat
- 1lb Fettuccini or pasta of choice
- 6 Egg yolks
- 1 Cup Grated Parmesean or Pecorino Romano
- 1 Tablespoon Creme Fraische (optional)
- 4 Tablespoons Butter
- 2 Tablespoons Fresh Chopped Chives + Extra for Garnish
- Salt & Pepper
DIRECTIONS:
- Prepare your pasta per package instructions
- Add egg yolks to a mixing bowl and whisk until fully combined
- In a large skillet over medium-low heat, melt two tablespoons of butter and add your crab meat and cook until warmed through
- Reduce heat to low and add the cooked pasta to the skillet along with the additional 2 tablespoons of butter, creme fraishe, eggs yolks, and cheese. Stir continuously to melt the cheese and combine the sauce. Add the fresh chives and season with salt and a generous amount of fresh cracked pepper
- Keep the pasta on low heat, stirring continously, until the sauce thickens to your desired consistancy
- Serve and garnish with additional fresh chives
