Chilled Bay Scallops with Tomato Ponzu & Lime
There’s just no getting around that this is the perfect warm weather dish and it’s so incredibly easy to make, that it’s sure to be a new go to. Somewhere in between a ceviche and a chilled summer soup, this dish highlights the natural sweetness of the Bay Scallops with a bright tartness that's just made to pair with a warm summer night.
Excellent as an appetizer or as a light meal for two.
Chilled Bay Scallops with Tomato Ponzu & Lime
Serves 2-4
INGREDIENTS:
- 1lb Bay Scallops, fully drained and dried
- 1/2 cup roughly chopped cucumber
- 1/2 shallot, roughly chopped
- 1/2 cup tomatoes, roughly chopped
- 1 cup Tomato Ponzu sauce
- Juice of 1 lime
- Salt to taste
- Microgreens or fresh cilantro for garnish
DIRECTIONS:
- Combine all ingredients to a mixing bowl and toss to combine
- Chill scallop mixture for a minimum of 10-15 minutes
- Season scallop mixture with salt to taste
- Serve and garnish with microgreens, fresh cilantro, and/or lime wedges
