Serves 2-4
INGREDIENTS:
- 1lb boneless skinless catfish fillets cut into 2" pieces
- 2 cups flour, seperated
- 1 egg, beaten
- 2 tablespoons cajun seasoning
- Vegetable oil
- Salt to taste
DIRECTIONS:
- Setup your breading station using three bowls. Add one cup of flour to one bowl, the beaten egg to another, and the other cup of flour plus the cajun seasoning to a third bowl. Using a fork, mix together the flour and cajun seasoning until well combined.
- First, dredge the catfish nuggets in the plain flour, then dip them in the egg wash, and then into the seasoned flour. Make sure they're full coated.
- Add vegetable oil to a large skill or medium sized sauce pot. Use enough oil to be able to completely cover the catfish nuggets, but do not fill more than half way. Bring oil to 350 degrees.
- Gently add your nuggets to the oil and fry until golden brown, approximately 2-4 mintues. Don't over fill the pan or pot, fry in batches if need be. Once golden, remove to a paper towl lined try to drain away excess oil and season with salt.
- Serve the nuggets with your favorite tartar sauce, hot sauce, and lemon.
