Cajun Inspired Sausage & Clams
Sometimes you just need some of those big bold Cajun flavors in your life and while maybe not traditional, this recipe is sure to help cure the Cajun craving! The addition of our Chef Martin Andouille Sausage really pairs nicely with the brininess of the clams and with just a little bit of heat, this dish is sure to wake up any tired palates!
Cajun Inspired Sausage & Clams
Serves 4
INGREDIENTS:
- 1lb Atlantic Surf Clams
- 12oz Chef Martin Andouille Sausage, cut into coins
- ½ Red Onion, chopped
- ½ Green Bell Pepper, chopped
- 1 Celery Stalk, chopped
- 2 Garlic Cloves, minced
- 2 cups Cherry Tomatoes, halved
- 2 Tbsp Tomato Paste
- 8oz Clam Juice
- 2 Tbsp Cajun Seasoning
- 2 Tbsp Fresh Lemon Juice
- Parsley, roughly chopped
- Hot Sauce
- Salt & Pepper
- 2 Tbsp Vegetable Oil
DIRECTIONS:
- Add vegetable oil to a large skillet over medium high heat. Once hot, add the andouille sausage
- When the sausage begins to brown around the edges, add the onion, bell pepper, and celery
- As the onions soften and start to become translucent, add the garlic and the tomato paste. Stir to combine and cook for approximately 2 minutes.
- Add the clam juice and bring to a simmer. Cook for 5-6 minutes.
- Add the clams and an additional ½ cup of water if needed. Simmer until the clams are cooked through and tender and the sauce has reduced to a thicker consistency, approximately 3-5 minutes
- Season with hot sauce, salt, and pepper to taste
- Serve with rice and garnish with parsley and additional lemon wedges.
