Broiled Salmon Soba Salad
This dish makes excellent use of fresh, beautiful salmon and is perfect for any night of the week or as a great lunch. Soba noodles cook up very quickly and with the addition of a few fresh or pickled veggies, they become something very elegant very quickly.
Broiled Salmon Soba Salad
Serves 4
INGREDIENTS:
- 4-6oz salmon
- 1 lb package of soba noodles
- ½ cup teriyaki sauce
- ½ cup green onions, diced
- ½ cup carrots, shredded
- ½ cup cilantro, roughly chopped
- 2 tablespoons ginger, grated
- 1 tablespoon garlic, grated
- 2 tablespoons soy sauce
- 2 tablespoons fresh lime juice
- 1 tablespoon fish sauce
- 1 teaspoon sesame oil
- vegetable oil
- furikake seasoning
- salt
DIRECTIONS:
- Prepare soba noodles as per package instructions. Once cooked, place the noodles in an ice bath to cool, drain, and set aside until needed.
- In a mixing bowl, add the green onions, carrots, ginger, garlic, sesame oil, soy sauce, fish sauce, and fresh lime juice. Stir to combine.
- Pour the dressing mixture over the noodles and toss to combine. Season with salt if needed. Refrigerate until needed.
- Place the salmon fillets onto a well-oiled baking sheet and using a pastry brush, distribute the teriyaki sauce evenly among the fillets, making sure they’re evenly coated. Season with salt and place into pre-heated oven set to broil.
- Cook the salmon for approximately 8-10 minutes or until fish is cooked through and the sauce has started to caramelize.
- Plate the soba noodles and top with the furikake seasoning and serve with the salmon and additional teriyaki sauce if desired.
