BBQ Shrimp with Fresh Mango Salsa
Quick and easy BBQ Shrimp are always a treat and paired with a fresh mango salsa, it's the perfect summertime meal!
BBQ Shrimp with Fresh Mango Salsa
Serves 4
INGREDIENTS:
- 1-1/2lbs Jumbo EZ Peel Shrimp
- 2 Cups Fresh Mango, roughly chopped
- 1 Cup Cherry Tomatoes, roughly chopped
- 1/4 Cup Red Onion, roughly chopped
- 1/2 Jalapeno, finely minced (optional)
- 1/4 Cup Cilantro, roughly chopped
- Juice of 2 Limes
- 1/2 Cup Ashman's BBQ Seafood Rub
- 1/4 Cup Vegetable oil
- Salt
DIRECTIONS:
- In a mixing bowl, combine the mango, tomatoes, onion, jalapeno, and cilantro. Add the juice of one lime and toss to combine. Season with salt to taste.
- Place shrimp in a large mixing bowl and add the oil, Ashman's BBQ Seafood Rub, juice of one lime, and a generous pinch of salt and toss to completely coat the shrimp
- Cook shrimp on a grill over medium-high heat for approximately 2-3 minutes per side or until fully cooked through
- Serve the shrimp with the fresh mango salsa
